My Favourite Vegetarian Spaghetti Bolognese

I write about vegetarian food quite a bit here on my personal blog, and being vegetarian does not mean you need to be a slave to the kitchen. Indeed one of my favourite meals is actually incredibly easy to prepare, but tastes great in my humble opinion!

Before I go further, I must stress this is not a sponsored post! This is just me as per usual writing about food I like.

I love vegetarian spaghetti bolognese, but like most meals you can’t go mad on the amount you spend on the meal, plus these days I can’t devote as much time as I would like to making meals. When you are tired and busy, it is very easy to default to basic food, but they often can be unhealthy.  Pizza springs to mind and in the past I’ve brought too many expensive chinese takeaways (imagine me doing a Homer Simpson impression drooling right this moment).

However the product range ‘Beanfeast’ has a dried vegetarian bolognese packet mix and takes under fifteen minutes to cook. Then include twenty minutes or so for egg free pasta to cook and a bit of prep time for a salad, and within a half hour a meal for two is ready!

All you need to do is add water to the mix and either cook in the microwave or on the hob. Often when given the choice of a microwave to cook a meal or a hob, grill or oven, I won’t choose the microwave option(I guess nasty microwave meals from tech support night shifts left a mark!). However in this instance I genuinely can’t tell the difference.

My wonderful girlfriend and I don’t eat eggs, but that is fine as the cheap Tesco pasta we buy is egg free. So we cook up half a packet of their pasta on the hob, whilst cooking the Beanfeast bolognese in the microwave. One packet of Beanfeast is enough for two people.

Also as the Beanfeast can be stored in cupboard for a while, we always keep a few packets of the bolognese or chilli versions in the cupboard. That way if we are tired we can either see if we have pasta, else dig out a rice out of the freezer we already cooked to accompany the chilli version, which is also quite nice.

We buy Beanfeasts from supermarkets in the UK, but I’m unsure if they are available abroad. The Beanfeasts are cheap, taste delicious and I enjoy having a salad with them. Sometimes I add vegetarian parmesan, lemon and / or ‘Cholula’ hot sauce. So even though back in the day I used to make homemade spaghetti bolognese from scratch, I don’t any more. This is a cheap and delicious meal that is incredibly easy to prepare.
